Whenever I buy deli food, I always (almost always) buy a little broccoli salad. Why do I not make this at home? It always seemed complicated, I guess. But it’s not!
1 cup mayonnaise
1/4 cup sugar
2 tblsp vinegar
1 head fresh broccoli
1/2 cup walnuts or sunflower seeds or pine nuts
1/2 cup raisins or dried cranberries
1/2 cup red onion
I leave out the onion, and it’s just fine. Don’t skimp on the sugar, though, or the vinegar is overwhelming. Combine the mayonnaise, sugar and vinegar to make the dressing, and refrigerate overnight. Combine the remaining ingredients and serve with the dressing, cold.
The dressing works great for cabbage cole slaw, too. I could eat this every day!

Looks good. Whole Foods makes virtually the same version but adds in some bacon. Takes away the vegetarian aspect, but worth it if you ask me.
