has anyone pickled carrots?

I see two recipes on Recipe Source for sweet pickled carrots processed in a hot water bath. Has anyone made these before? Very simple recipe, and we have lots of baby carrots just the right size for jars right now. I’m concerned of course about botulism, and whether they keep okay.
