food: sun dried tomatoes

Once you’ve canned salsa. And spaghetti sauce. And plain tomatoes. And still have tomatoes left over — what do you do with them?

Sun-dried tomatoes, of course. I used an oven-dry recipe, and then borrowed a dehydrator for the second batch. A friend suggested her sister dries them in a pup-tent and lets the sun actually do the work, which if you think about saving electricity makes a lot of cents. If any one else out there has actually used the sun, please share your experience in the comments!

Here’s a photo from the oven-dried batch. This jar represents a cookie rack and a half of roma tomatoes. (Note: If using an oven, the tomatoes slip right out of the racks and fall down, so spread out something to catch them!). The same size jar also holds two full circles of a dehydrator. I used recipesource for my recipes, but really it’s just dry them, fill with olive oil and a sprig of rosemary. And a pinch of salt.

Now we wait 6 weeks to let them mellow, and I’ll let you know how they turned out!
