There were so many blog posts this year with people making marshmallows, that I thought we’d better whip up a batch, too. They’re surprisingly easy, and taste just like you’d expect and are less dry than the store-bought kind.
They melt away just right.
What none of the posts mentioned was that gelatin smells distasteful. When I was whipping it up, I thought it smelled revolting. I understand it’s an animal bi-product, but it’s always seemed pretty innocuous to me. You can’t taste it, they taste like vanilla, but when one melted in the cocoa, the smell came out in the cup. I used this recipe, but in the future I think I would look into one of the vegetarian alternative recipes.
